Ingredients

Base

  • 1 cup Greek yogurt or sour cream
  • 1 cup real mayonnaise

Seasonings and Flavorings

  • 1/3 cup packed cilantro
  • 3-5 chipotle peppers in adobo sauce
  • 1 teaspoon adobo sauce (from the chipotle can)
  • 2 cloves garlic, peeled
  • 1 1/2 tablespoons lime juice
  • 2 tablespoons ranch seasoning mix (1 oz. packet)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin

Liquids

  • 1/4 cup milk, plus more as needed


Instructions

  1. Blend: Add the Greek yogurt or sour cream, mayonnaise, cilantro, chipotle peppers, adobo sauce, garlic cloves, lime juice, ranch seasoning mix, smoked paprika, ground cumin, and 1/4 cup of milk to a blender. Puree all ingredients until smooth, scraping down the sides of the blender as needed. Start with 3 chipotle peppers, blend, then add another 1/2 to 1 pepper and blend again if you want more spiciness.
  2. Adjust to Taste: Taste the dressing and adjust lime juice, salt, or chipotle quantity to your preference. For a thinner consistency, add milk or water one tablespoon at a time and blend briefly until you reach the desired texture.
  3. Chill Before Serving: Transfer the dressing to a container and refrigerate for at least 30 minutes. The dressing will thicken as it chills, so before serving, whisk in a little milk if needed to loosen it back up for perfect drizzling or dipping consistency.

  • DIY ranch seasoning mix: Combine dried parsley, dried dill, garlic powder, onion powder, salt, pepper, and dried chives.
