- 1 can chickpeas (15 ounces), drained and rinsed
- 10 Medjool dates, pitted
- 1/4 cup cocoa powder
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla bean paste
- 1/8 teaspoon salt
Instructions
- Soak the Dates: Heat 1 cup of water until hot, either by microwaving or on the stovetop. Pour the hot water over the pitted dates in a bowl, cover it, and let the dates soak for about 30 minutes to soften.
- Blend Ingredients: Add the soaked dates along with the soaking water, drained chickpeas, cocoa powder, maple syrup, vanilla bean paste, and salt to a food processor. Process for 2 to 3 minutes, scraping down the sides once or twice, until the mixture is smooth and creamy.
- Adjust Sweetness: Taste the hummus and, if desired, add a little more maple syrup to sweeten. Blend again until fully combined and smooth.

- For a thicker hummus, reduce the amount of soaking water added to the food processor.
