Crust and Crumble

  • 1 cup butter (softened, at room temperature)
  • 2 cups light brown sugar (packed)
  • 2 large eggs (at room temperature)
  • 2 tsp vanilla bean paste
  • 3 cups quick cooking oats
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt

Chocolate Filling

  • 14 oz sweetened condensed milk (1 14-ounce can)
  • 12 oz chocolate chips (1 12-ounce bag or 1 ½ cups, preferably semi-sweet)
  • 3 Tbsp butter
  • 1 tsp salt
  • 2 tsp vanilla bean paste
  • ⅓ cup walnuts (chopped)


Instructions

  1. Preheat: Preheat your oven to 350°F (175°C). Lightly grease, butter, or spray a 9×13 inch baking pan with non-stick cooking spray to prepare for baking.
  2. Cream Mixture: In a large mixing bowl, cream together the softened butter and packed light brown sugar until smooth and well combined. Add the eggs and vanilla bean paste, mixing thoroughly. Stir in the baking soda and salt evenly.
  3. Add Dry Ingredients: Fold in the all-purpose flour and quick cooking oats until the mixture is evenly combined, forming the crust and crumble base.
  4. Form Crust: Transfer two-thirds of this oat mixture into the prepared baking pan. Use your hands to press it firmly down to create the bottom crust layer. Set aside the remaining one-third to use later as the crumble topping.
  5. Prepare Chocolate Filling: On low heat, combine sweetened condensed milk, chocolate chips, butter, and salt in a large saucepan. Stir occasionally until the mixture becomes a smooth sauce without lumps.
  6. Mix Filling: Remove the saucepan from heat and stir in the vanilla bean paste followed by the chopped walnuts, ensuring they are evenly distributed.
