- Whip the Egg Whites: Using a stand mixer with a whisk attachment, handheld mixer, or whisk, beat the egg whites starting at low speed and gradually increasing to high until stiff peaks form, about 3 minutes in a stand mixer. The whites should be fluffy and hold shape well.
- Create Egg White Mounds: Spoon the whipped egg whites onto the prepared baking sheet, making two separate mounds. Use the back of a spoon to create a yolk-sized indentation in the center of each mound forming a nest shape.
- Initial Bake: Place the baking sheet in the oven and bake the egg white nests for 2 minutes to firm them up slightly.
- Add Yolks and Bake More: Remove the baking sheet, gently place each egg yolk into the indentation on the egg white nests. Return to the oven and bake for an additional 4 minutes. After baking, let the cloud eggs cool for 1 minute; the residual heat will continue cooking the yolks gently.
- Serve: Serve the cloud eggs immediately, optionally over avocado toast or your favorite base.
- Microwave Preparation: For a quicker version, separate the eggs as before, beating the egg whites with a pinch of salt until stiff peaks form using a whisk or mixer.
- Microwave Egg Whites: Transfer the whipped egg whites to a microwave-safe bowl or large mug, create a yolk-sized indentation in the center with the back of a spoon, and microwave for 25 seconds to partially cook.
- Add Yolk and Finish Cooking: Carefully place the egg yolk into the indentation, then microwave for an additional 30 seconds or until yolk reaches preferred doneness.
