Ingredients
Crust
- 2 cups graham wafer crumbs (or digestive biscuit crumbs)
- 1/4 cup sugar
- 1/2 cup melted butter
Coconut Layer
- 1 can sweetened condensed milk (300ml in Canada, 14 oz in the US)
- 2 cups unsweetened dried coconut (dessicated coconut)
- 2 tsp vanilla bean paste
Topping
- 1 1/4 cups chocolate chips
- 3 tbsp butter or whipping cream
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the bars.
- Prepare the Pan: Grease a 9×9-inch baking pan and line it with parchment paper to prevent sticking and ensure easy removal of the bars.
- Make the Crust Mixture: Melt 1/2 cup of butter and combine it with the graham wafer crumbs and sugar, mixing thoroughly to evenly distribute the butter throughout the crumb mixture.
- Press Crust Into Pan: Firmly press the crumb mixture evenly into the bottom of the prepared pan to form a compact crust base.
- Bake the Crust: Bake the crust for 10 minutes in the preheated oven to set it and develop flavor.
- Prepare Coconut Layer: While the crust bakes, mix the sweetened condensed milk, unsweetened dried coconut, and vanilla bean paste together in a bowl until well combined.
- Add Coconut Layer: Spread the coconut mixture evenly over the baked graham crust layer.
- Bake with Coconut Layer: Return the pan to the oven and bake for another 10 to 15 minutes, or until the edges start to turn golden brown. Avoid overbaking to keep the bars moist.
- Cool Completely: Remove the pan from the oven and allow the bars to cool completely in the pan to set properly.
- Melt Chocolate Topping: In a heatproof bowl, melt the chocolate chips with the 3 tablespoons of butter or whipping cream until smooth and glossy.
- Apply Chocolate Layer: Spread the melted chocolate evenly over the cooled coconut layer and let it stand at room temperature for about an hour to allow the chocolate to set firmly.
- Cut and Serve: Once the chocolate has set, cut the bars into squares and enjoy your Coconut Dream Bars.
- Storage Tip: These bars freeze well, making them ideal for holiday baking or keeping on hand for an easy dessert anytime.
Notes
- For best results, use parchment paper in the pan to prevent sticking and ensure clean bar edges.
- Be careful not to overbake the coconut layer to avoid dryness; watch for light browning on the edges.
- You can substitute whipping cream for butter in the chocolate topping for a creamier finish.
- Store leftover bars in an airtight container at room temperature or refrigerate for longer freshness.
- Freeze cut bars wrapped tightly to enjoy as a sweet treat later.
