Description

These Corn Fritters are a delicious and easy-to-make snack or light meal featuring a savory batter filled with cottage cheese, baby spinach, corn kernels, and cheese. Crispy on the outside and soft on the inside, they’re fried to a golden perfection and served with creamy avocado slices, cooling sour cream, and a tangy sweet chilli sauce. Perfect for a quick weekday meal or entertaining guests with minimal fuss.

  • 2 eggs
  • 250g tub Cottage Cheese
  • ½ cup milk
  • 60g baby spinach, finely chopped
  • 1 can (400g) corn kernels, drained
  • 1 spring onion, finely sliced
  • 60g (½ cup) cheese, grated
  • 1.5 cups self raising flour
  • Salt and black pepper to season
  • 1 Tbsp olive oil for frying

  • Sweet chilli sauce
  • 1 avocado, sliced


Instructions

  1. Prepare the batter: Crack the eggs into a large bowl and whisk them together until smooth. Stir in the cottage cheese, milk, finely chopped baby spinach, drained corn kernels, finely sliced spring onion, and grated cheese until well combined.
  2. Add flour and season: Gradually add the self raising flour to the wet ingredients, mixing thoroughly to form a smooth batter with no lumps. Season generously with salt and black pepper to taste.
  3. Heat the pan and fry: Warm the olive oil in a large non-stick frying pan over medium heat. Spoon a heaped tablespoon of the batter into the pan and spread it evenly to create fritters about 10cm in diameter.
  4. Cook the fritters: Fry until the bottom is crisp and golden brown, then carefully flip the fritters to cook the other side until similarly golden and cooked through. Remove the cooked fritters from the pan and keep them warm in a low oven as you fry the remaining batter.
  5. Serve: Arrange the warm corn fritters on a serving plate with sliced avocado, a dollop of sour cream, and a drizzle of sweet chilli sauce for dipping and extra flavor.

Notes

  • Use self-raising flour to help the fritters rise and become fluffy; if unavailable, use all-purpose flour with 1 ½ teaspoons of baking powder added.
  • Make sure to drain the corn thoroughly to avoid a watery batter.
  • You can substitute baby spinach with other leafy greens like kale or silverbeet finely chopped.
  • To keep fritters warm while cooking the batch, set your oven to a low heat (around 90°C/200°F).
