Description
These creamy black bean taquitos are a delicious and crispy Mexican-inspired appetizer or snack. Made with a smooth blend of cream cheese, black beans, green chiles, and spices, wrapped in soft corn tortillas and pan-fried until golden brown, they offer a perfect combination of creamy, spicy, and crunchy textures.
Ingredients
Filling
- 4 oz. cream cheese, room temperature
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (4 oz.) can diced green chiles, drained
- 2 green onions, sliced
- 3 dashes hot sauce (optional)
- 1/8 tsp garlic powder
- 1/8 tsp salt, or to taste
Others
- 15 (6-inch) corn tortillas
- 3 Tbsp cooking oil, divided, for frying
Instructions
- Prepare the filling: In a mixing bowl, combine the cream cheese, rinsed and drained black beans, drained diced green chiles, sliced green onions, hot sauce (if using), garlic powder, and salt. Stir everything together thoroughly until evenly mixed. Taste the filling and adjust salt or hot sauce according to your preference.
- Soften the tortillas: Stack 5 corn tortillas on a plate and cover them with a damp paper towel. Microwave for approximately 20 seconds to soften the tortillas and make them more pliable, preventing cracking when rolling.
- Heat the skillet: Place a large non-stick or cast iron skillet over medium heat and allow it to warm up while you prepare the taquitos.
- Fill and roll taquitos: Quickly spoon about 2 tablespoons of the black bean filling onto each softened tortilla. Roll each tortilla tightly to encase the filling completely, ensuring the seam side is closed to prevent unrolling during cooking.
- Fry the taquitos: Add about 1 tablespoon of cooking oil to the heated skillet and allow it to shimmer. Place the rolled taquitos seam side down into the skillet. Cook them on each side, flipping carefully, until each side turns golden brown and crispy. Remove cooked taquitos and place them on a clean plate.
- Repeat: Continue the filling, rolling, and frying process in batches of five taquitos, adding a little more oil to the skillet as needed until all 15 taquitos are cooked.
- Serve: Serve the crispy, creamy black bean taquitos hot for the best taste and texture.
Notes
- Microwaving the tortillas before rolling prevents them from cracking.
- You can customize the filling by adding spices like cumin or chili powder for extra flavor.
- Use a non-stick or cast iron skillet for even frying and easy cleanup.
- For a healthier alternative, lightly brush oil on the taquitos and bake or air fry instead of frying.
- Serve with salsa, guacamole, or sour cream for dipping.
