Mushroom Fries
- 2 large portobello mushrooms (cut into 1/2 inch pieces)
- 1 1/2 cups panko breadcrumbs

- 1 tbsp onion salt
- 2 tsp black pepper
- 2 tsp smoked paprika
- 2 tsp garlic powder
- 3 eggs
- 2 cups vegetable oil
- 1 tbsp parsley (minced)
Instructions
- Cut Mushrooms: Slice the portobello mushrooms into approximately 1/2 inch wide strips. Variations in size are fine—uniformity is not required.
- Prepare Coating Stations: Arrange three bowls for breading. In the first bowl, place the panko breadcrumbs. In the second bowl, combine the flour, onion salt, black pepper, smoked paprika, and garlic powder. In the third bowl, crack and whisk the eggs thoroughly.
- Coat Mushroom Pieces: Dip each mushroom strip first into the flour mixture, ensuring it’s fully coated. Then dip into the whisked eggs, followed by the panko breadcrumbs. Repeat this breading process for all the mushroom strips.
- Prepare for Frying: Line a baking sheet with paper towels to absorb excess oil after frying and set aside.
- Heat Oil: Pour vegetable oil into a cast iron pan or Dutch oven to a depth of about 2 inches. Heat the oil to 370°F (188°C). Adjust oil quantity to fit your pan size.
- Fry Mushrooms: Fry the coated mushroom pieces in batches to avoid overcrowding the pan. Each batch should fry for 30 seconds to 1 minute until the exterior is golden and crispy and the interior is cooked. Remove from oil and place on the prepared baking sheet to drain excess oil.
- Garnish and Serve: Sprinkle the fried mushroom fries with minced parsley. Serve immediately with your choice of dipping sauces such as sriracha mayo or ketchup.
