For the Steak Bites

- ½ small shallot, finely minced
- 6 cloves garlic, minced
- 1 cup heavy cream
- ⅓ cup freshly grated Parmesan cheese
- ½ tablespoon chopped Italian parsley (plus more for garnish)

Instructions
- Prepare Mashed Potatoes: Start by making the red skin mashed potatoes according to your preferred recipe or the linked instructions. Keep warm and set aside for serving.
- Season the Steak: In a bowl, toss the 1-inch steak cubes with a few drizzles of oil, smoked paprika, garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Let the steak marinate for 15 minutes to absorb the flavors.
- Sear the Steak: Heat a large cast iron skillet over high heat until very hot. Add a few drizzles of oil, then add the seasoned steak cubes. Sear the steak for about 2 minutes or more on each side, depending on your desired doneness, until a nice crust forms. Remove the steak from the pan and set aside.
