  • 1 whole head garlic, cloves peeled
  • 1/2 cup chicken broth or stock
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1 cup heavy/whipping cream

Instructions

  1. Prepare the chicken: Cut each chicken breast in half lengthwise to create 4 smaller cutlets. Season them generously with salt and pepper, then coat lightly in flour to help develop a golden crust during cooking.
  2. Sauté the chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Once hot, add the chicken cutlets and sauté for 4 to 5 minutes on each side until golden brown and cooked through. Remove chicken from the pan and set aside.
  3. Cook the garlic: Lower the heat to medium or medium-low if using cast iron. Add the remaining 1 tablespoon of butter to the pan. Once melted, add the peeled garlic cloves and cook, stirring often, for 3 to 4 minutes until the garlic is lightly browned and fragrant.
  4. Deglaze and reduce: Pour in the chicken broth, lemon juice, and sprinkle the garlic powder into the skillet. Stir and allow the mixture to bubble for about 4 minutes, letting the liquid reduce noticeably to concentrate flavor.
  5. Make the cream sauce and finish cooking: Stir in the heavy cream, then return the chicken cutlets to the pan. Continue cooking for approximately 5 minutes, allowing the sauce to thicken and the chicken to become fully cooked inside. Once done, optionally garnish with freshly chopped parsley before serving.
