Ingredients
Potatoes
- 1 lb. white potatoes
- 1/2 tsp sea salt (for boiling water)
Creamy Garlic Sauce
- 3 cloves garlic, chopped
- 1 tablespoon butter
- 1/2 cup heavy cream
- Salt and pepper, to taste
- 2 tablespoons parsley, chopped (optional)
Instructions
- Cook potatoes: Start by bringing a medium saucepan of water to a boil. Add 1/2 teaspoon of sea salt to the water. Cut the unpeeled potatoes into quarters, slicing lengthwise and then crosswise if necessary, and add them to the boiling salted water. Boil the potatoes for 15 to 20 minutes or until they are tender enough to be pierced easily with a fork. Remove the potatoes from the water once cooked.
- Make creamy garlic sauce: While the potatoes cook, chop the garlic cloves finely. In the empty saucepan, melt 1 tablespoon of butter over medium heat. Add the chopped garlic and sauté for about 3 minutes until the garlic turns golden and fragrant, being careful not to burn it. Then add 1/2 cup of heavy cream and reduce the heat. Allow the garlic and cream mixture to simmer gently for about 5 minutes, letting the flavors meld together.
- Assemble the potatoes: Add the drained potatoes back into the saucepan with the creamy garlic sauce. Season with salt and freshly ground pepper to taste. Stir gently to coat the potatoes evenly with the sauce. Finally, sprinkle 2 tablespoons of chopped fresh parsley over the top and mix well. Serve warm.
Notes
- Peeling the potatoes is optional; leaving the skin on adds texture and nutrients.
- Use fresh garlic for best flavor; roasted garlic can be substituted for a milder taste.
- Heavy cream can be substituted with half-and-half for a lighter creaminess, but the sauce will be less rich.
- For a dairy-free version, use plant-based butter and cream alternatives.
- To enhance the dish, consider adding a sprinkle of grated Parmesan cheese or a pinch of smoked paprika.
