Instructions
- Make a garlic paste: Using a mortar and pestle, crush the garlic cloves with the salt until they form a smooth paste. Alternatively, finely mince or grate the garlic and mix with the salt to create a flavorful base.
- Combine ingredients: In the bowl of a food processor, add the garlic paste, tahini paste, and fresh lime or lemon juice. Blend the mixture until it becomes thick and creamy as it emulsifies.
- Adjust consistency: Gradually add cold water, a little at a time, while continuing to blend until the sauce reaches your desired smooth and pourable consistency.
