Description

A creamy and tangy tahini sauce made with fresh garlic, lemon juice, and tahini paste. This versatile sauce can be used as a dressing, dip, or drizzle for Mediterranean dishes, salads, and grilled vegetables. Quick to prepare and easy to customize with fresh parsley.

Ingredients

Main Ingredients

  • 1-2 garlic cloves, peeled
  • 1/2 teaspoon salt
  • 3/4 cup tahini paste
  • 1/2 cup fresh lime or lemon juice
  • About 1/4 cup cold water
  • 1 cup chopped parsley (optional)

Instructions

  1. Make a garlic paste: Using a mortar and pestle, crush the garlic cloves with the salt until they form a smooth paste. Alternatively, finely mince or grate the garlic and mix with the salt to create a flavorful base.
  2. Combine ingredients: In the bowl of a food processor, add the garlic paste, tahini paste, and fresh lime or lemon juice. Blend the mixture until it becomes thick and creamy as it emulsifies.
  3. Adjust consistency: Gradually add cold water, a little at a time, while continuing to blend until the sauce reaches your desired smooth and pourable consistency.
  4. Finish and serve: Transfer the tahini sauce to a serving bowl and stir in the chopped parsley if using. Serve immediately as a dip, dressing, or sauce to complement a variety of dishes.

Notes

  • If you prefer a milder garlic flavor, start with one clove and adjust to taste.
  • The lemon or lime juice can be substituted with vinegar if desired.
  • Tahini sauce can be stored in an airtight container in the refrigerator for up to one week.
  • Adjust the water quantity to achieve thicker or thinner sauce according to your preference.
  • Adding fresh herbs like parsley brightens the flavor but is optional.
