Ingredients
Salmon
- 4 salmon fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
Sauce
- 3 garlic cloves, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ cup parmesan cheese, grated
- 1 tablespoon cornstarch
- 1 cup spinach, chopped
- ½ cup sun-dried tomatoes, chopped
Instructions
- Prepare and sear the salmon: Heat 2 tablespoons of olive oil in a large skillet over medium-low heat. Season the salmon fillets with salt and pepper on both sides. Place the salmon skin-side down into the skillet and pan sear for about 7 minutes without moving, allowing the skin to crisp up.
- Flip and finish cooking the salmon: Carefully turn the salmon fillets over and cook for an additional 3 minutes, or until the salmon is barely pink in the center but cooked through. Once done, remove the salmon from the skillet and place it on a plate to rest.
- Make the creamy sauce base: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then pour in the heavy cream and chicken broth. Stir in garlic powder, Italian seasoning, and grated parmesan cheese to infuse the sauce with rich flavor.
- Thicken the sauce: Whisk the cornstarch into the sauce to avoid lumps, then let it simmer gently for 1-2 minutes until it starts to thicken to a creamy consistency.
- Add vegetables and combine: Stir in the chopped spinach and sun-dried tomatoes, allowing the spinach to wilt completely and the tomatoes to warm through, which will deepen the flavor of the sauce.
- Return salmon to the skillet: Place the cooked salmon fillets back into the skillet, spooning the sauce over the top. Let everything simmer together for a minute more so the flavors meld perfectly before serving.
Notes
- Use fresh salmon fillets for the best flavor and texture.
- If chicken broth is unavailable, vegetable broth or water with a pinch of salt can be substituted.
- Sun-dried tomatoes add a tangy sweetness, but they can be omitted if preferred.
- Ensure the skillet is not too hot when simmering the sauce to prevent the cream from curdling.
- This dish pairs wonderfully with a side of rice, pasta, or crusty bread to soak up the creamy sauce.
