Description

This Creamy Tuscan Salmon recipe features tender pan-seared salmon fillets in a rich and luscious sauce made with sun-dried tomatoes, fresh spinach, garlic, and parmesan cheese. Ready in just 20 minutes, it’s a quick and elegant dish perfect for a weeknight dinner or special occasion, combining vibrant Mediterranean flavors with creamy indulgence.


Ingredients

Salmon and Seasoning

  • 1 pound fresh salmon (cut into 4 pieces)
  • Salt & pepper to taste
  • 1/4 teaspoon garlic powder
  • Flour for dredging

For Cooking

  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 1/2 cup chicken broth
  • 1 teaspoon lemon juice
  • 1/4 cup sun-dried tomatoes (see note)
  • 1 cup heavy/whipping cream
  • 1-2 cups packed fresh baby spinach
  • 1 tablespoon fresh basil (sliced thin)
  • Freshly grated parmesan cheese, for garnish


Instructions

  1. Prepare the salmon: Sprinkle each salmon piece on both sides with salt, pepper, and garlic powder. Dredge the salmon pieces lightly in flour, shaking off any excess.
  2. Cook the salmon: Heat olive oil and butter in a skillet over medium-high heat. Once hot, add the salmon pieces and cook for 3-4 minutes on each side until a nice crust forms but the salmon is not fully cooked through. Remove salmon from the pan and set aside.
  3. Make the sauce base: Add chicken broth, lemon juice, and sun-dried tomatoes to the same skillet. Let the mixture bubble gently for a couple of minutes to reduce slightly and intensify flavors.
  4. Add cream: Stir in the heavy cream and cook for a couple more minutes, allowing the sauce to thicken.
  5. Wilt spinach and finish cooking salmon: Reduce heat to medium-low. Add fresh baby spinach to the skillet and let it wilt for about 30 seconds. Return the salmon to the skillet and cook for a few more minutes until the salmon is cooked through and the sauce has thickened to your liking.
  6. Serve: Plate the salmon with the creamy Tuscan sauce, garnished with fresh sliced basil and grated parmesan cheese as desired.

Notes

  • Sun-dried tomatoes can be packed in oil or dry; if using dry-packed, soak in warm water briefly before using.
  • Be careful not to overcook the salmon during the initial sear to keep it moist and tender.
  • You can serve this with pasta, rice, or crusty bread to soak up the delicious sauce.
