- Mix the Cheese and Seasonings: In a large bowl, combine mozzarella, parmesan, almond flour, eggs, Italian seasoning, garlic powder, onion powder, sea salt, black pepper, and 1 tablespoon olive oil. Stir well to create an even mixture.
- Add Ground Chicken: Add the ground chicken to the cheese and seasoning mixture. Mix gently just until all ingredients are combined, taking care not to overmix to keep patties tender.
- Shape Patties: Divide the mixture into 16 small patties about 3/8 inch thick. Arrange them on parchment paper on a cutting board. Cut the parchment around each patty into squares for easy lifting and flipping.
- Heat Oil and Cook First Batch: Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat until shimmering (about 2 minutes). Place the patties into the skillet in a single layer, using the parchment paper to transfer them, then peel the paper off once patties are in the pan. Fry the patties for 3-4 minutes per side until they are golden brown and cooked through.
- Cook Remaining Patties: Repeat the frying process with the remaining patties, adding the last tablespoon of olive oil as needed, and cooking them in batches to avoid overcrowding the pan.
- Rest and Serve: Let the cooked patties rest for 5-10 minutes to retain juices and improve flavor before serving.
