Instructions
- Prepare the Dates: Use your fingers to carefully split each Medjool date in half and remove the pit from the center. Alternatively, you can use a knife to cut them in half. Arrange the date halves, cut side up, on a plate lined with parchment paper for easy cleanup.
- Add the Filling: Spoon roughly ½ teaspoon of peanut butter into the cavity of each date half. Then, sprinkle chopped peanuts on top of the peanut butter to add a satisfying crunch to every bite.
- Melt the Chocolate: Melt the dark chocolate chips using a double boiler method by bringing an inch of water to a boil in a small saucepan and placing a heat-safe bowl with the chocolate chips over it. Stir gently until smooth and fully melted. Alternatively, you can microwave the chocolate chips in short intervals, stirring often.
- Drizzle with Chocolate: Using a spoon, drizzle the melted chocolate over the top of each stuffed date. You only need to coat the top since the date itself is already sweet. While the chocolate is still glossy, sprinkle flaky sea salt over the tops for an extra flavor boost if desired.
