Description

This easy homemade applesauce recipe combines the sweetness of apples with the added nutrition of carrots and butternut squash for a delicious, fiber-rich, and naturally sweet treat. Perfect as a snack, side dish, or a wholesome addition to your meals, this sauce is simple to make using basic stove-top cooking and an immersion blender for a smooth finish.

Ingredients

Fruits and Vegetables

  • 6 apples, cored and roughly chopped (skins on for extra fiber or peeled if preferred)
  • 2 large carrots, roughly chopped
  • 2 cups cubed butternut squash (fresh or frozen)

Flavorings

  • Juice of 1/2 a lemon
  • 1 teaspoon ground cinnamon

Liquids

  • 1 cup water

Instructions

  1. Combine Ingredients: Place the chopped apples, carrots, butternut squash, lemon juice, ground cinnamon, and water into a large pot. Stir well to mix all components evenly.
  2. Boil Mixture: Cover the pot and bring the mixture to a boil over high heat. This initial boiling helps start the softening process.
  3. Simmer Until Tender: Reduce heat to a low simmer and keep the pot covered. Allow the contents to cook for 15-20 minutes or until the apples and vegetables are tender and fully cooked through.
  4. Puree the Sauce: Using an immersion blender, puree the cooked mixture to your preferred consistency. If you don’t have an immersion blender, let the mixture cool slightly, then transfer it to a blender to puree. For a chunkier texture, use a potato masher instead of blending.
  5. Serve or Store: Enjoy the applesauce warm right away, or let it cool completely before placing it in an airtight container. Store in the refrigerator for up to a week or freeze for longer preservation.

Notes

  • Leaving the apple skins on increases fiber content but feel free to peel if preferred.
  • Use fresh or frozen butternut squash based on availability and convenience.
  • The lemon juice adds brightness and helps prevent the apples from browning.
  • You can adjust cinnamon quantity to taste for more or less spice.
  • Store in airtight containers to maintain freshness and prevent odors from other foods.
  • This recipe is naturally gluten free and vegetarian.
