Instructions
- Heat the oil: Heat the avocado oil in a large deep skillet or wok over medium-high heat.
- Cook beef and onion: Add the ground beef and diced onion to the skillet. Cook for 5-6 minutes, breaking up the beef with a wooden spoon, until the meat is browned and fully cooked through.
- Add garlic and ginger: Stir in the minced garlic and grated ginger. Cook for 1-2 minutes, stirring frequently, until fragrant.
- Scramble eggs: Push the beef mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until just set. Then stir the eggs into the beef mixture to combine.
- Add vegetables and sauce: Add the coleslaw mix, low-sodium soy sauce, rice vinegar, sriracha, and sesame seed oil. Stir well to combine and cook for 3-5 minutes, stirring occasionally, until the cabbage softens but still retains some crunch.
- Finish and serve: Remove the skillet from heat. Stir in the sliced green onions, then sprinkle toasted sesame seeds on top before serving.
