Instructions

  1. Mix dry ingredients. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, ground ginger, cinnamon, and cloves until fully combined. Then set aside.
  2. Combine wet ingredients. In a separate large measuring cup or bowl, whisk together the melted butter, whole milk, eggs, molasses, freshly grated ginger, and vanilla bean paste until the mixture is smooth and homogenous.
  3. Combine wet and dry. Pour the wet ingredients into the dry ingredient bowl. Whisk the batter well until it is smooth and free of lumps.
  4. Let batter rest. Allow the batter to rest for 10 minutes to hydrate the flour and meld the flavors. During this time, preheat your waffle iron on high heat to ensure it’s ready.
