  • 2 cups fresh pineapple, cut into 1-inch pieces
  • 1 orange bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 package mushrooms, stems removed
  • 1 red onion, cut into 1-inch pieces
  • Fresh parsley, for garnish

  • 1 block extra firm tofu, pressed and cut into 1-inch pieces

  • 1 cup vegan BBQ sauce


Instructions

  1. Press the Tofu: Start by pressing the tofu for about 15 minutes to remove excess moisture. Place the tofu on a paper towel-lined plate, cover with another paper towel, and place a heavy object such as a cookbook on top. This ensures better texture for grilling.
  2. Prepare the Vegetables and Fruit: While the tofu is pressing, cut the pineapple, bell peppers, and red onion into 1-inch pieces. Remove the stems from the mushrooms, keeping them whole for skewering.
  3. Cut the Tofu: Once the tofu has been pressed and excess water released, cut it into 1-inch cubes to match the size of the vegetables and pineapple pieces.
  4. Assemble the Skewers: Thread the tofu, pineapple, bell peppers, mushrooms, and red onion alternately onto metal skewers. Place the assembled skewers onto a baking sheet for easy handling.
  5. Apply the BBQ Sauce: Generously coat all sides of each skewer with the vegan BBQ sauce to add flavor and help with caramelization during grilling.
  6. Grill the Kebabs: Preheat the grill to medium heat. Place the skewers on the grill and cook for about 10 minutes, turning halfway through to ensure even cooking. After flipping, brush each skewer with another layer of BBQ sauce for enhanced taste.
