Ingredients
Meat and Seasonings
- 1 pound lean ground beef (can substitute ground turkey)
- 1 teaspoon chili powder
- 1 teaspoon dried basil
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- 1 teaspoon garlic, minced
Vegetables and Additional Seasonings
- 2 tablespoons olive or avocado oil
- 2 cups carrots, peeled and diced
- 2 cups sweet potatoes, diced
- 1 teaspoon salt
- 1 teaspoon chili powder
- ½ teaspoon ground ginger
- ½ teaspoon onion powder
- ¼ teaspoon crushed red pepper flakes (use ½ teaspoon for more heat)
- 1 cup beef stock or broth
- 1 pound Brussels sprouts, diced
Instructions
- Cook the Ground Beef: Add the ground beef (or turkey) to a large skillet over medium-high heat. Use a spatula to crumble the meat and cook, stirring occasionally until browned.
- Season the Beef: Stir in salt, black pepper, chili powder, onion powder, dried basil, and minced garlic. Sauté for one more minute until the garlic turns golden. Remove the beef and garlic mixture from the pan and set aside.
- Sauté the Vegetables: Add olive or avocado oil to the same skillet and heat. Add diced sweet potatoes and carrots, then season with salt, chili powder, ground ginger, onion powder, and crushed red pepper flakes. Keep the heat at medium-high to brown the veggies, sautéing for 5 to 10 minutes while stirring frequently until the sides of the potatoes are browned.
- Simmer with Beef and Brussels Sprouts: Reduce the heat to medium. Return the cooked ground beef to the skillet, add beef stock, and diced Brussels sprouts. Stir well, cover the skillet, and let it simmer for 5 to 8 minutes, or until the Brussels sprouts reach your desired tenderness.
Notes
- Ground turkey is a great substitute for a leaner protein option.
- You can adjust the amount of crushed red pepper flakes according to your heat preference.
- Keeping the heat medium-high when cooking the vegetables gives a nice browned flavor.
- If you prefer softer vegetables, increase the simmer time when covered.
- For added freshness, garnish with chopped parsley or green onions before serving.
