Ingredients
Greek Salsa
- 1/2 cucumber, diced
- 1/4 red onion, diced
- 1/4 cup kalamata olives, sliced
- Salt and pepper to taste
- Juice of half a lemon
- 2 tsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
Tzatziki
- 1 cup coconut yogurt (brand suggestion: Culina)
- 3 tbsp cucumber, diced
- 2 tsp fresh dill, chopped
- 1 tsp garlic powder
- Pinch of salt
- Juice of 1/4 lemon
Ground Chicken
- 2 tsp olive oil
- 1 lb ground chicken
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried dill
- 1 tbsp fresh parsley, chopped
- Juice of 1/2 lemon
- Salt and pepper to taste (omit pepper for AIP)
To Serve
- Rice or cauliflower rice
Instructions
- Prepare Greek Salsa: Combine diced cucumber, red onion, kalamata olives, lemon juice, fresh dill, parsley, salt, and pepper in a bowl. Toss well to mix thoroughly and chill in the refrigerator to let flavors meld.
- Make Tzatziki: In a separate bowl, mix coconut yogurt with diced cucumber, fresh dill, garlic powder, pinch of salt, and lemon juice. Stir until well combined, then refrigerate to chill.
- Cook Ground Chicken: Heat olive oil in a pan over medium heat. Add ground chicken and crumble it with a spatula while cooking until fully cooked through. Season with garlic powder, onion powder, dried oregano, dried dill, fresh parsley, lemon juice, salt, and pepper. Stir continuously to ensure the spices are evenly distributed.
- Assemble Bowls: Place a serving of rice or cauliflower rice in each bowl. Spoon seasoned cooked chicken over the rice. Top with generous spoonfuls of chilled Greek salsa and creamy tzatziki. Serve immediately for a fresh, vibrant meal.
