Description

These Healthy Oatmeal Breakfast Cookies are a nutritious and delicious way to start your day. Made with quick oats, ripe bananas, creamy peanut butter, and a hint of cinnamon, they provide a naturally sweet and satisfying snack that’s perfect for breakfast or anytime you need a wholesome treat. Ready in just 20 minutes, these cookies are easy to make and packed with fiber and protein to keep you energized.

Ingredients

Main Ingredients

  • 2 cups (180 grams) quick oats
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (125 grams) creamy peanut butter
  • ½ teaspoon vanilla bean paste
  • 2 large ripe bananas, mashed (about 1 ½ cups)
  • ¼ cup (45 grams) chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.
  2. Mix Ingredients: In a large bowl, combine the quick oats, ground cinnamon, salt, creamy peanut butter, vanilla bean paste, mashed bananas, and chocolate chips. Stir everything together thoroughly until the mixture is well blended.
  3. Form Cookies: Using a tablespoon or small ice cream scoop, drop 2-tablespoon-sized scoops of the cookie mixture onto the prepared baking sheet. Use the back of the spoon or your fingers to gently flatten each scoop into the shape of a cookie.
  4. Bake: Place the baking sheet in the preheated oven and bake the cookies for 14 to 17 minutes, or until the edges start to brown slightly. This will ensure the cookies are cooked through but still soft inside.
  5. Cool and Serve: Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your healthy oatmeal breakfast cookies warm or at room temperature.

Notes

  • Use ripe bananas for natural sweetness and moisture.
  • Substitute chocolate chips with raisins or nuts for a different flavor.
  • Store cookies in an airtight container at room temperature for up to 3 days or freeze for longer storage.
  • These cookies make a great grab-and-go breakfast or snack.
  • You can add a pinch of nutmeg or ginger for extra warmth in the flavor.
