- 3.5 oz (100g) red dragon fruit cubes
- 2 tbsp sugar

- 1 cup tapioca starch
- More tapioca starch for dusting

- Prepare the Dragon Fruit Mixture: Blend the red dragon fruit cubes with sugar until the mixture is completely smooth and well combined.
- Make the Dough: Pour the dragon fruit puree into a small pot and heat it until boiling. Once it reaches a boil, turn off the heat and add half of the tapioca starch, mixing vigorously for 6-7 seconds. Then add the remaining starch and mix thoroughly.
- Knead the Dough: While the dough is still hot, use a scraper or similar tool to mix it, then knead with your hands until warm but not fully cooled. Continue kneading until the dough is almost smooth.
- Shape the Boba Pearls: Divide the dough into four equal pieces and roll each piece into a long log. Pinch off small portions and roll them into round balls. Dust the balls generously with tapioca starch to prevent sticking, then sift off any excess starch with a strainer.
- Cook the Boba Pearls: You can freeze the pearls after dusting or cook them immediately. To cook on stove, bring a large pot of water to a boil, add the boba pearls, and cook over medium-high heat for about 10 minutes until the pearls float. Turn off the heat, cover with a lid, and let them rest for another 10 minutes. For larger pearls, cook for 20 minutes and set aside for 20 more minutes. Alternatively, cook in an Instant Pot by adding pearls and water, sealing the lid and vent, then cooking on manual high pressure for 5 minutes.
- Soak and Sweeten: Optionally, soak the cooked pearls in iced water to firm up their chewiness and then strain. Mix them with simple syrup or honey to add sweetness before serving.

- You can use a microwave instead of a pot for making the dough. Mix the dragon fruit puree with half the starch, microwave for 2 minutes, then mix in the remainder of the starch and proceed with kneading and shaping.
