Description

Ingredients

Dough

  • 1 1/8 cups warm water
  • 3 teaspoons active dry yeast
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 3 cups all-purpose flour
  • 1 teaspoon salt

Chicken

  • 3 boneless, skinless chicken thighs
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons honey
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons adobo sauce from can of chipotle peppers
  • 1 tablespoon olive oil

Pizza Toppings

  • 3/4 cup marinara sauce
  • 12 ounces fontina cheese, freshly grated
  • 1 (4 ounce) can diced green chiles
  • 3 scallions, sliced
  • 2/3 cup sweet corn
  • 6 ounces goat cheese, crumbled
  • 1/3 cup fresh chopped cilantro


Instructions

  1. Prepare the Dough: In a large bowl, combine warm water, active dry yeast, honey and olive oil. Mix well with a spoon and let sit for about 10 minutes until the mixture is foamy, indicating the yeast is active. Add 2 1/2 cups of flour and salt to the bowl, stirring until the dough comes together but is still sticky. Turn the dough out onto a floured surface and knead in the remaining 1/2 cup flour for several minutes until smooth and elastic. Lightly oil the original bowl, place the dough inside, turning to coat with oil, cover with a towel, and let rise in a warm place for 1 to 1 1/2 hours until doubled in size.
  2. Shape the Dough: Once risen, punch down the dough and return it to a floured surface. Roll or stretch the dough into your desired pizza shape, suitable for one large pizza serving 3-4 people. Place the shaped dough onto a baking sheet or pizza peel. Cover with a towel and let it rest in a warm place for 10 minutes to relax.
  3. Broil the Chicken: Preheat your oven’s broiler to high. Season the chicken thighs evenly with chipotle chili powder, garlic powder, salt and pepper. Arrange on a baking sheet and broil for 7 minutes. Flip the chicken and broil another 7 minutes. Meanwhile, whisk honey, apple cider vinegar and 1 teaspoon of adobo sauce in a small bowl. Brush this glaze on one side of the chicken and broil 1 minute, then flip and brush the other side, broiling an additional 1 minute until caramelized and flavorful.
  4. Shred the Chicken: Remove chicken from oven and let cool slightly. Shred the chicken into bite-sized pieces using two forks or by hand.
  5. Preheat the Oven: Set your oven to 425°F (220°C) if using a baking sheet. If you have a pizza stone, preheat oven to 475°F (245°C) for 15 minutes to get it very hot for optimal baking.
  6. Assemble the Pizza: Brush the edges of the pizza dough with olive oil. Spread the marinara sauce evenly over the dough, swirling in the remaining 1 teaspoon of adobo sauce for an extra smoky heat. Sprinkle half of the grated fontina cheese over the sauce. Evenly distribute the shredded chicken, diced green chiles, sliced scallions, sweet corn, and crumbled goat cheese on top. Finish by evenly sprinkling the remaining fontina cheese over the toppings.
  7. Bake the Pizza: Bake on the baking sheet at 425°F for 20 to 25 minutes, or on the pizza stone at 475°F for 15 to 20 minutes. Bake until the cheese is melted, golden, and bubbly, and the crust is crisp and cooked through.
