Chicken

  • 2 large chicken breasts
  • Salt & pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 3 tablespoons low sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup chicken broth
  • 1/2 tablespoon lemon juice or apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch

Garnish

  • Chopped scallions, to taste (optional but recommended)


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and move the oven rack to the top third position to ensure even cooking and caramelization.
  2. Prepare Sauce: In a small bowl, whisk together the soy sauce, honey, chicken broth, lemon juice or apple cider vinegar, minced garlic, and cornstarch until well combined. Set this honey garlic sauce aside for later use.
  3. Prepare Chicken: Slice each chicken breast in half lengthwise to create four thinner pieces total. Season both sides generously with salt and pepper to taste.
  4. Heat Skillet: Place an oven-safe skillet over medium-high heat and add the olive oil and butter. Allow the skillet to heat up fully so the chicken will sear properly.
  5. Sear Chicken: Add the chicken pieces to the hot skillet and cook for 4 to 5 minutes on each side until golden brown and nicely seared.
  6. Add Sauce and Simmer: Give the prepared sauce a quick whisk, then pour it into the skillet around and between the chicken pieces. Let it come to a gentle bubble for about 30 seconds, allowing the sauce to start thickening slightly.
  7. Bake Chicken: Remove the skillet from the stovetop, spoon some sauce over the chicken, and carefully transfer the skillet to the preheated oven.
