- 1 tbsp avocado oil
- 1 tbsp sesame oil
- 2 cloves garlic, peeled and minced
- 1 tsp minced ginger
- 3 tbsp dark soy sauce
- 3 tbsp honey
Main Ingredients
- 2 chicken breasts (approx 350g / 12.5 oz), chopped into bite-sized pieces
- 1 red bell pepper, chopped into large chunks
- 1 onion, peeled and sliced into squares

- 1 tbsp sesame seeds
- small bunch of coriander/cilantro, roughly torn
Instructions
- Prepare the Marinade: In a small bowl, combine avocado oil, sesame oil, minced garlic, minced ginger, dark soy sauce, and honey. Mix well until the honey is fully incorporated.
- Marinate the Chicken: Place the chopped chicken pieces into a bowl and pour over three-quarters of the marinade. Cover the bowl and refrigerate for 1 hour, or up to 24 hours for more intense flavor.
- Prepare Skewers: If using wooden skewers, soak them in water to prevent burning during grilling. Alternatively, use metal skewers.
- Preheat the Grill: Heat your BBQ or griddle until it reaches a very hot temperature, ideal for grilling.
- Assemble the Skewers: Thread a piece of marinated chicken onto a skewer, followed by a large chunk of red bell pepper, another chicken piece, and a slice of onion. Repeat this pattern until all chicken and vegetables are used. Discard any leftover marinade in the bowl.
- Grill the Skewers: Place the assembled skewers on the hot grill. Cook for 8-10 minutes, turning every 2-3 minutes to ensure even cooking. Halfway through, brush the skewers with the reserved marinade to enhance flavor and moisture.
- Check for Doneness: To ensure the chicken is fully cooked, cut into the largest piece to confirm there is no pink in the middle.
