Ingredients
Chicken
- 8 bone-in chicken thighs
Honey Mustard Marinade
- ¼ cup honey
- ¼ cup Dijon mustard
- 2 garlic cloves, minced
- 1 tablespoon extra-virgin olive oil
- 1 ½ teaspoons finely chopped fresh rosemary
- 1 ½ teaspoons finely chopped fresh thyme
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Pat dry: Preheat the oven to 350°F (177°C). Place the chicken thighs in a baking dish and pat them dry thoroughly with a paper towel to ensure the skin crisps up nicely during cooking.
- Mix marinade: In a small bowl, whisk together the honey, Dijon mustard, minced garlic, extra-virgin olive oil, finely chopped rosemary, thyme, kosher salt, and freshly ground black pepper until well combined.
- Brush chicken: Generously brush or spoon the honey mustard mixture over the tops of the chicken thighs, coating them evenly to infuse the meat with flavor.
- Bake: Place the baking dish in the preheated oven and bake the chicken for 40 to 45 minutes, or until the internal temperature reaches 175°F (80°C) and the meat is fully cooked through.
- Crisp skin: In the last 2 to 3 minutes of baking, turn on the oven’s top broiler to crisp up the skin. Watch carefully to prevent burning and remove once the skin is golden brown and crispy.
Notes
- For best results, use bone-in chicken thighs as they retain moisture better during baking.
- Make sure to pat the chicken completely dry before applying the marinade to achieve crispier skin.
- If you prefer spicier flavors, add a pinch of cayenne pepper to the marinade.
- Use a meat thermometer to check for doneness to ensure food safety and perfect texture.
- Leftovers can be refrigerated for up to 3 days and reheated gently in the oven or microwave.
