Ingredients
Protein
- 1 lb Skirt steak (or flank steak; sliced thinly against the grain)
Seasoning and Marinade
- 2 tbsp Fajita seasoning (divided)
- 2 tbsp Lime juice
Cooking Ingredients
- 1 tbsp Avocado oil
- 2 large Bell peppers (sliced into thin strips)
- 1 medium Onion (sliced into thin half moons)
- 1/2 cup Beef bone broth (or any broth of choice)
Instructions
- Season the steak: Toss the sliced skirt steak in 1 tablespoon of fajita seasoning until well coated to infuse the meat with bold flavors.
- Sauté the steak: Turn on the Instant Pot and press the “Saute” button, adjusting the temperature to “More” by tapping “Saute” repeatedly until the display reads “More.” Add 1 tablespoon of avocado oil to the pot. Place half of the steak in a single layer and sauté for 1-2 minutes on each side to brown the meat without cooking it through. Remove this batch and repeat with the remaining steak. Return all browned steak pieces to the pot.
- Add vegetables and seasonings: Add the sliced bell peppers and onion to the pot. Sprinkle with the remaining 1 tablespoon of fajita seasoning, tossing or stirring gently to coat the vegetables evenly. Pour in the beef bone broth and lime juice to add moisture and enhance flavor.
- Pressure cook: Secure the Instant Pot lid and set the steam vent to the sealing position. Press the “Manual” button and set the timer to 2 minutes on High pressure to cook everything perfectly. Once cooking is complete, perform a Quick Release by carefully opening the vent to release the pressure immediately.
Notes
- For best results, slice the steak thinly against the grain to ensure tenderness.

- Use homemade fajita seasoning or store-bought for convenience.
- Serve with warm tortillas, guacamole, sour cream, and your favorite fajita toppings.
- Adjust the quantity of lime juice to taste for more tanginess.
