Description

This Instant Pot Fajitas recipe offers a quick and flavorful way to enjoy tender skirt steak cooked with bell peppers and onions, seasoned perfectly with fajita spices and a hint of lime. Ready in just 12 minutes, this dish is ideal for a fast weeknight dinner full of vibrant Tex-Mex flavors.


Ingredients

Protein

  • 1 lb Skirt steak (or flank steak; sliced thinly against the grain)

Seasoning and Marinade

  • 2 tbsp Fajita seasoning (divided)
  • 2 tbsp Lime juice

Cooking Ingredients

  • 1 tbsp Avocado oil
  • 2 large Bell peppers (sliced into thin strips)
  • 1 medium Onion (sliced into thin half moons)
  • 1/2 cup Beef bone broth (or any broth of choice)


Instructions

  1. Season the steak: Toss the sliced skirt steak in 1 tablespoon of fajita seasoning until well coated to infuse the meat with bold flavors.
  2. Sauté the steak: Turn on the Instant Pot and press the “Saute” button, adjusting the temperature to “More” by tapping “Saute” repeatedly until the display reads “More.” Add 1 tablespoon of avocado oil to the pot. Place half of the steak in a single layer and sauté for 1-2 minutes on each side to brown the meat without cooking it through. Remove this batch and repeat with the remaining steak. Return all browned steak pieces to the pot.
  3. Add vegetables and seasonings: Add the sliced bell peppers and onion to the pot. Sprinkle with the remaining 1 tablespoon of fajita seasoning, tossing or stirring gently to coat the vegetables evenly. Pour in the beef bone broth and lime juice to add moisture and enhance flavor.
  4. Pressure cook: Secure the Instant Pot lid and set the steam vent to the sealing position. Press the “Manual” button and set the timer to 2 minutes on High pressure to cook everything perfectly. Once cooking is complete, perform a Quick Release by carefully opening the vent to release the pressure immediately.
