Ingredients

Dry Ingredients

  • 1 cup all-purpose flour

Instructions

  1. Preheat and Prepare Pan. Preheat your oven to 350℉ (175℃). Grease or butter a mini muffin pan to prevent sticking and set it aside.
  2. Mix Dry Ingredients. In a large mixing bowl, whisk together the all-purpose flour, chia seeds, baking powder, baking soda, and salt until evenly combined.
  3. Combine Wet Ingredients. In a separate bowl, whisk the sugar, egg, milk, melted butter, and lemon zest until the mixture is smooth and homogenous.
  4. Combine Wet and Dry. Pour the wet ingredients into the dry ingredients and gently stir until just combined, taking care not to overmix to keep the muffins tender.
