Ingredients
Filling
- 1 diced tomato (grape/cherry tomatoes work best for a sweeter taste, or plum tomatoes)
- 1/3 cup diced red onion
- 1 cup chopped spinach
- 1/2 cup feta cheese
- 1 cup shredded mozzarella cheese
Other
- 3 burrito style tortillas
- Small amount of oil (for cooking)
Instructions
- Prepare filling: In a medium bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix until evenly incorporated.
- Assemble quesadillas: Lay out each tortilla and spread 1/3 of the filling mixture on one half of each tortilla. Fold the other half of the tortilla over the filling to create a half-moon shape.
- Cook quesadillas: Heat a small amount of oil in a large flat pan or on a griddle over medium heat. Place each folded tortilla in the pan and cook for 3-4 minutes on each side, pressing down with a spatula occasionally, until the tortilla is lightly browned and the cheese inside has melted.
- Serve: Remove the quesadillas from the pan and cut each into 4 slices. Serve warm with your choice of toppings such as sour cream, salsa, or pico de gallo.
