- 1 very ripe banana
- 5-7 medjool dates (pitted)
- 1 teaspoon vanilla bean paste
Instructions
- Process Nuts and Oats: In a food processor, pulse the walnuts, almonds, and rolled oats until you achieve a fine, grainy texture similar to coarse flour.
- Add Wet Ingredients: Add the pitted medjool dates (starting with 5), the ripe banana, vanilla bean paste, sea salt, and cinnamon to the processor. Blend until the mixture begins to come together into a dough. If it feels too dry, add extra dates one or two at a time. If too moist, incorporate 1-2 tablespoons more oats gradually.
- Shape Bites: Using your hands, roll the dough into small, bite-sized balls. If the dough is sticky or difficult to shape, place it in the freezer for 15-20 minutes to firm up for easier rolling.
- Chill and Serve: Refrigerate the formed bites for 20-30 minutes to set properly. Enjoy immediately or store in an airtight container in the fridge for up to 5 days.
