Description

These No Bake Banana Bread Bites are a quick and healthy snack combining the flavors of ripe banana, nuts, oats, and dates into bite-sized energy balls. Perfect for a nutritious treat without the need for baking, they come together in just 20 minutes and offer a convenient way to enjoy wholesome ingredients on the go.

Ingredients

Dry Ingredients

  • 1 cup raw walnuts
  • 1 cup raw almonds
  • ⅔ cup rolled oats (regular or gluten free)
  • 1/2 tablespoon cinnamon
  • Dash of sea salt

Wet Ingredients

  • 1 very ripe banana
  • 5-7 medjool dates (pitted)
  • 1 teaspoon vanilla bean paste

Instructions

  1. Process Nuts and Oats: In a food processor, pulse the walnuts, almonds, and rolled oats until you achieve a fine, grainy texture similar to coarse flour.
  2. Add Wet Ingredients: Add the pitted medjool dates (starting with 5), the ripe banana, vanilla bean paste, sea salt, and cinnamon to the processor. Blend until the mixture begins to come together into a dough. If it feels too dry, add extra dates one or two at a time. If too moist, incorporate 1-2 tablespoons more oats gradually.
  3. Shape Bites: Using your hands, roll the dough into small, bite-sized balls. If the dough is sticky or difficult to shape, place it in the freezer for 15-20 minutes to firm up for easier rolling.
  4. Chill and Serve: Refrigerate the formed bites for 20-30 minutes to set properly. Enjoy immediately or store in an airtight container in the fridge for up to 5 days.

Notes

  • Use very ripe bananas for maximum sweetness and softness in the dough.
  • Adjust the number of dates based on the desired sweetness and dough consistency.
  • These bites can be stored in the freezer for longer preservation if desired.
  • Feel free to substitute nuts or oats with gluten-free options if needed.
  • Vanilla bean paste can be substituted with vanilla extract if unavailable.
