Ingredients
Cheesecake Base
- 8 oz cream cheese, softened

- 2 cups heavy cream, cold
- 1 can (14 oz) sweetened condensed milk

- 1 batch strawberry compote
Instructions
- Prepare Cheesecake Mixture: In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla bean paste together until the mixture is smooth and creamy. This forms the base flavor and texture of the ice cream.
- Whip Heavy Cream: In a separate chilled bowl, whip the cold heavy cream until stiff peaks form. Be vigilant to stop whipping at the right time to avoid turning the cream into butter. Start at low speed and gradually increase for optimal control.
- Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture until fully incorporated, then fold in the sweetened condensed milk carefully to maintain the light texture.
