Ingredients
Produce
- 4 cloves garlic, minced
- 8 oz. baby bella mushrooms, sliced
Dairy
- 2 Tbsp butter
- 1/3 cup heavy cream
- 1/4 cup grated Parmesan cheese
Pantry
- 1/8 tsp salt
- 1/8 tsp freshly cracked pepper
- 8 oz. fettuccine pasta
- 2.5 cups vegetable broth
Instructions
- Prepare Ingredients: Mince the garlic cloves and slice the baby bella mushrooms evenly to ensure they cook uniformly.
- Sauté Garlic and Mushrooms: Heat 2 tablespoons of butter in a deep skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the sliced mushrooms, salt, and freshly cracked pepper. Continue to sauté until the mushrooms are softened, the moisture has evaporated, and their edges start to brown, enhancing their flavor.
- Add Pasta and Broth: Pour in the fettuccine pasta and 2.5 cups of vegetable broth into the skillet. Stir to mix everything, even if the broth doesn’t completely cover the pasta.
- Cook the Pasta: Cover the skillet with a lid and raise the heat to medium-high to bring the broth to a boil. Once boiling, stir the pasta briefly, cover it again, and reduce the heat to medium-low. Let it simmer, stirring occasionally and replacing the lid each time, for about 10 minutes until the pasta is tender and most of the liquid has been absorbed, leaving just a little bit behind.
- Finish with Cream and Cheese: Stir in the heavy cream and turn off the heat. Add the grated Parmesan cheese and stir continuously until the cheese melts into a creamy sauce. Taste and adjust seasoning with additional salt or pepper if needed.
- Serve: Serve the creamy mushroom pasta immediately for the best flavor and texture.
Notes
- For a richer flavor, use homemade vegetable broth if available.
- Ensure to stir occasionally while simmering to prevent the pasta from sticking to the bottom of the skillet.
- Optionally, garnish with fresh parsley or additional Parmesan before serving.
- This recipe can be made vegetarian by ensuring the vegetable broth is vegetable-based and contains no animal products.
- Use gluten-free pasta if you want to make the recipe gluten-free, but note that cooking times may vary.
