This One-Pot Teriyaki Noodles recipe is a quick and delicious meal featuring tender cabbage and carrots sautéed in a savory teriyaki sauce with soy sauce, brown sugar, and aromatic spices. Easy to prepare in a single pot, it combines spaghetti noodles simmered to perfection and finished with a sprinkle of sesame seeds for a delightful Asian-inspired dinner.
Ingredients
Vegetables
- ½ green cabbage, shredded
- 2 carrots, shredded
Teriyaki Sauce
- ⅔ cup soy sauce
- ½ cup brown sugar
- ½ teaspoon ground mustard
- 1 teaspoon ground ginger
- ½ teaspoon garlic powder
Other Ingredients
- 1 teaspoon olive oil
- 16 oz spaghetti (1 pound box)
- 3½ cups water
- 1 tablespoon sesame seeds
Instructions
- Sauté the vegetables: Heat a large pot over medium-high heat. Once hot, add 1 teaspoon of olive oil, then the shredded cabbage and carrots. Sauté for about 5 minutes until the vegetables start to become tender, stirring occasionally.
- Add sauce and pasta: Pour in ⅔ cup soy sauce, ½ cup brown sugar, ½ teaspoon ground mustard, 1 teaspoon ground ginger, and ½ teaspoon garlic powder into the pot and mix well with the vegetables. Add the spaghetti directly to the pot — breaking it in half is optional for easier handling — and pour in 3½ cups of water.
- Cook the noodles: Cook uncovered for 15-18 minutes, stirring every few minutes once the noodles begin to soften and more frequently towards the end of cooking to prevent sticking. Continue until the noodles are cooked through and have absorbed much of the sauce.
- Finish and serve: Remove the pot from heat. Toss in 1 tablespoon of sesame seeds and mix well. Serve immediately, garnishing with additional sesame seeds and optional chopped green onions if desired.
Notes
- Breaking the spaghetti in half before cooking is optional but can make stirring easier.
- Stirring frequently towards the end of cooking prevents the noodles from sticking to the bottom of the pot.
- Adjust the soy sauce and brown sugar quantities to taste for a sweeter or saltier teriyaki flavor.
- For added protein, consider adding cooked chicken, tofu, or shrimp before serving.
- Garnish with chopped green onions or fresh herbs for extra freshness and color.
