Description

Pickle de Gallo is a fresh, tangy, and crunchy salsa-inspired condiment featuring diced dill pickles, cucumber, red bell pepper, and zesty jalapeño. Enhanced with fresh dill and pickle brine, it’s a versatile topping perfect for adding a punch of flavor to chips, cottage cheese, sandwiches, and grilled favorites.

Ingredients

Pickle de Gallo Ingredients

  • 1 cup diced dill pickles
  • 1 cup diced cucumber
  • 1 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1 jalapeño, seeded and minced
  • 1 garlic clove, minced
  • 1 tablespoon chopped fresh dill
  • 2 tablespoons pickle brine (from the pickle jar)
  • Freshly ground black pepper, to taste

Instructions

  1. Combine Ingredients: In a medium bowl, add the diced dill pickles, cucumber, red bell pepper, red onion, minced jalapeño, garlic, fresh dill, pickle brine, and freshly ground black pepper. Stir thoroughly until all ingredients are evenly mixed.
  2. Serve and Enjoy: Use immediately or chill briefly for enhanced flavor. Serve Pickle de Gallo with potato chips, over cottage cheese, or as a refreshing garnish for hot dogs, hamburgers, or sandwiches to add a zesty crunch.

Notes

  • For less heat, remove all jalapeño seeds before mincing.
  • Adjust the amount of pickle brine based on your taste preference for acidity.
  • Use fresh dill for the best flavor; dried dill will alter the taste.
  • This recipe is best served fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
