Description

This Pickled Corn Relish is a vibrant, tangy side dish bursting with sweet corn, crunchy vegetables, and a hint of spice. Ingredients

Vegetables and Herbs

  • 2 cups corn kernels (340 grams)
  • 1/2 cup red onion, diced (57 grams)
  • 1/2 medium red bell pepper, diced (58 grams)
  • 1 jalapeño pepper, seeded and diced (15 grams)
  • 2 cloves garlic, minced (8 grams)
  • 1/4 cup cilantro, chopped

Pickling Liquid

  • 3/4 cup water (6 fl oz)
  • 1/2 cup apple cider vinegar (4 fl oz)
  • 2 tbsp sugar (25 grams)
  • 1 tsp salt (6 grams)
  • 1/2 tsp Flavor God Garlic Lovers Seasoning
  • 1/4 tsp black pepper


Instructions

  1. Prepare the vegetables: Add 2 cups corn kernels, 1/2 cup diced red onion, 1/2 diced red bell pepper, 1 seeded and diced jalapeño pepper, and 2 cloves minced garlic into a mixing bowl. Set this mixture aside while you prepare the pickling liquid.
  2. Make the pickling liquid: Bring 3/4 cup of water almost to a boil. Once hot, add 2 tablespoons sugar and 1 teaspoon salt, stirring until fully dissolved. Then add 1/2 cup apple cider vinegar, 1/2 teaspoon Flavor God Garlic Lovers Seasoning, and 1/4 teaspoon black pepper. Stir well to combine all ingredients.
  3. Combine and marinate: Pour the warm pickling liquid over the bowl with the corn and vegetables. Stir to combine, making sure to push the corn mixture down into the liquid as much as possible to ensure it is well submerged. Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld and the vegetables to pickle slightly.
  4. Finish and serve: Just before serving, stir in the 1/4 cup chopped cilantro into the marinated corn relish. Serve chilled or at room temperature as a flavorful condiment or side dish.

  • This relish can be stored in the refrigerator for up to 5 days and develops more flavor over time.
