These Pineapple Chicken Wings offer a flavorful twist on classic wings with a sweet and tangy homemade pineapple sauce. Marinated with a spicy rub and slow-cooked on the BBQ, then crisped to perfection, these wings are perfect for summer gatherings or a delicious appetizer.
Ingredients
Chicken Wings
- 2 kg chicken wings
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tbsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1 tbsp sweet paprika
- 1 tbsp brown sugar
Pineapple Sauce
- 425 g tinned pineapple (blended)
- 1 tbsp tomato ketchup
- 1 tsp minced ginger
- 1/2 lime (juiced)
- 1 – 3 tsp dried chili flakes (adjust to spice preference)
- 120 ml apple cider vinegar
- 120 g caster sugar
- 1 garlic clove (minced)
- 1 tbsp corn flour
- 2 tbsp water
Garnish
- 1 spring onion (chopped)
- 1/2 lime (cut into wedges)
- 1 handful coriander
- Pinch of sesame seeds
Instructions
- Prepare Pineapple Sauce: In a saucepan over medium heat, combine the blended pineapple, tomato ketchup, minced ginger, dried chili flakes, apple cider vinegar, caster sugar, and minced garlic. Stir well and cook for 5 to 8 minutes until the sauce thickens slightly.
- Add Lime Juice: Squeeze in the juice of half a lime and stir to combine.
- Thicken Sauce: Mix corn flour and water in a small bowl until smooth, then stir this mixture into the pineapple sauce to further thicken it. Remove from heat and set aside.
- Prepare Chicken Wings: Toss the chicken wings in olive oil to coat evenly.
- Make the Rub: In a bowl, mix garlic powder, salt, black pepper, cayenne pepper, sweet paprika, and brown sugar. Rub this spice mixture thoroughly over the wings.
- Marinate: Let the wings rest with the rub for a minimum of 30 minutes or up to 24 hours in the refrigerator to deepen flavor.
- Cook Wings on BBQ: Place the wings on a BBQ grill using indirect heat set at 150°C (302°F). Cook for 45 minutes, basting with some of the pineapple sauce every 10 to 12 minutes.
- Crisp Wings: Increase the BBQ heat to 220°C (428°F) and cook the wings for an additional 3 to 5 minutes to get a crispy exterior.
- Serve: Drizzle a little pineapple sauce over the wings. Garnish with sesame seeds, chopped coriander, spring onion, and lime wedges. Serve immediately.

- You can adjust the amount of chili flakes in the sauce depending on your preferred spice level.
- For best flavor, marinate the wings overnight if time allows.
