  • 2 pieces bread of choice
  • ~1 tablespoon fresh chopped basil
  • 2-3 heaping tablespoons cottage cheese
  • 2-3 tablespoons tomato sauce
  • 2 sundried tomatoes, finely chopped
  • 1/4 teaspoon garlic powder
  • pinch red pepper flakes
  • 1 tablespoon oil or butter (preferably butter)


Instructions

  1. Prepare the Bread and Fillings: Spread tomato sauce evenly on one piece of bread. On the other piece, spread the cottage cheese evenly. Sprinkle the fresh chopped basil over the tomato sauce side and the finely chopped sundried tomatoes over the cottage cheese side. Then, sprinkle garlic powder and a pinch of red pepper flakes on top for added flavor. Close the sandwich by pressing the two pieces of bread together, sealing the fillings inside.
  2. Cook the Grilled Cheese: Heat the oil or butter in a skillet over medium heat. Once hot, place the sandwich in the skillet. Cook for 4-5 minutes on one side, or until the bread is golden brown and crispy. Flip the sandwich carefully and cook the other side for another 4-5 minutes until that side is also crisped and browned to your liking, and the cheese inside starts to melt.
