Description

This Quinoa Brittle recipe is a crunchy, sweet snack made with nutritious ingredients like quinoa, pecans, and chia seeds. It combines a touch of maple syrup and coconut sugar for natural sweetness, baked to a golden crisp. Perfect for a healthy treat or holiday gift.

Ingredients

Dry Ingredients

  • 1/2 cup uncooked white quinoa (sprouted quinoa recommended for better digestibility)
  • 3/4 cup pecans, chopped
  • 1/4 cup gluten-free rolled oats
  • 2 Tbsp chia seeds
  • 2 Tbsp coconut sugar
  • 1 pinch sea salt (optional)

Wet Ingredients

  • 2 Tbsp coconut oil
  • 1/2 cup maple syrup

Instructions

  1. Preheat Oven: Preheat your oven to 325 degrees F (162 C) and line a baking sheet with parchment paper, making sure it covers all edges to prevent spilling.
  2. Mix Dry Ingredients: In a mixing bowl, combine quinoa, chopped pecans, rolled oats, chia seeds, coconut sugar, and optional sea salt. Stir to mix evenly.
  3. Heat Wet Ingredients: In a small saucepan over medium-low heat, warm the coconut oil and maple syrup together for 2-3 minutes, stirring occasionally until fully combined with no separation.
  4. Combine and Spread: Pour the warm coconut oil and maple syrup mixture over the dry ingredients. Stir thoroughly to coat all the dry ingredients evenly. Spread the mixture onto the prepared baking sheet in an even layer using a metal spoon, ensuring uniform thickness to avoid burning the edges or leaving the center undercooked.
  5. Bake: Bake in the preheated oven for 15 minutes. Then, rotate the baking sheet to promote even browning and continue baking for another 5-10 minutes. Watch closely to prevent burning. The brittle is done when it is uniformly deep golden brown and fragrant. The edges may look darker but are caramelized and crisp.
  6. Cool and Break: Allow the brittle to cool completely before breaking it into bite-sized pieces using a sharp knife or your fingers.
  7. Store: Store any leftovers in an airtight container or sealed bag at room temperature for up to 1 week, or freeze for up to 1 month. This brittle makes a delightful holiday snack or gift.

Notes

  • If possible, use sprouted quinoa for better digestibility.
  • Ensure the brittle layer is spread evenly to avoid burnt edges or undercooked centers.
  • Watch closely during the last few minutes of baking to prevent burning.
  • Store in airtight containers to maintain crispness.
  • This brittle can be customized by adding other nuts or seeds as desired.
