Ingredients
Salmon and Seasoning
- 4 (6 oz) salmon fillets (skin on or off)
- ¾ tsp Kosher salt (divided)
- Flaky sea salt (for serving)
- Lemon wedges (for serving)
Pistachio-Crust Mixture
- ½ cup pistachios (shelled, very finely chopped)
- ⅓ cup panko breadcrumbs
- 2 Tbsp chopped parsley (plus more for serving, optional)
- 1 tsp fresh lemon zest
Flavor Base and Sauce
- 1 Tbsp neutral oil (such as grapeseed, avocado, or canola oil)
- 1 medium shallot (finely chopped, about 1-2 Tbsp)
- 1 medium garlic clove (finely chopped)
- 1 Tbsp mayo, sour cream, creme fraiche, or Greek yogurt
- 2 tsp honey
- 1 tsp Dijon mustard
Instructions
- Prepare the salmon. Preheat the oven to 300°F (150°C). Pat the salmon fillets dry with paper towels and sprinkle with ½ tsp of Kosher salt evenly to season.
- Sweat the shallot. Heat 1 tablespoon of neutral oil in a nonstick skillet over medium heat. Add the finely chopped shallot and cook for 2 to 3 minutes until softened. Season with the remaining ½ tsp Kosher salt. Add the chopped garlic and cook for an additional minute until fragrant.
- Toast the pistachio mixture. Add the finely chopped pistachios and panko breadcrumbs to the skillet. Reduce heat to medium-low and cook, stirring frequently, until the pistachios are toasted and the breadcrumbs are golden brown, about 5 minutes. Remove from heat and transfer to a shallow bowl. Stir in 2 tablespoons of chopped parsley and 1 teaspoon of fresh lemon zest to complete the crust mixture.
- Make the quick sauce. In a small bowl, whisk together 1 tablespoon of mayo (or sour cream, creme fraiche, or Greek yogurt) with 2 teaspoons of honey and 1 teaspoon of Dijon mustard until smooth and well combined.
- Coat salmon with pistachios. Brush a thin layer of the prepared honey-Dijon sauce on top of each salmon fillet. Press the top of each fillet into the pistachio breadcrumb mixture, gently pressing to ensure it adheres well and forms an even crust.
- Bake the salmon. Place the coated fillets on a parchment-lined baking sheet. Bake in the preheated oven for 20 minutes, or until the internal temperature of the salmon reaches 120°F (49°C). The fish will continue to cook slightly as it rests. Let the salmon sit for 5 minutes before serving.
- Serve. Sprinkle flaky sea salt over the top and serve the salmon with lemon wedges and additional chopped parsley, if desired.
