Ingredients

Garlic Roasting

  • 2 heads garlic
  • 4 teaspoons olive oil, divided
  • Kosher salt
  • Fresh cracked pepper

Dip Components

  • 10 oz. goat cheese, room temperature
  • 1/2 cup shredded Parmesan cheese
  • 3 tablespoons whole milk
  • 2 teaspoons fresh thyme leaves
  • 1/2 cup grape tomatoes

To Serve

  • Sliced French bread or crostini for dipping


Instructions

  1. Preheat Oven and Prepare Garlic: Heat the oven to 400°F. Slice the tops off each head of garlic to expose the cloves. Drizzle the cut sides with 1 teaspoon olive oil and season with kosher salt and fresh cracked pepper.
  2. Roast Garlic: Place the garlic heads cut-side down on a baking sheet and roast for 30 minutes, or until the cloves are soft and caramelized. Allow the garlic to cool enough to handle.
  3. Preheat Oven for Baking Dip: Lower the oven temperature to 350°F to prepare for baking the cheese mixture.
  4. Combine Ingredients: In a medium bowl, add the room temperature goat cheese, shredded Parmesan, whole milk, and fresh thyme leaves. Squeeze the softened roasted garlic cloves from their skins into the bowl and stir everything together until smooth and well combined.
  5. Season the Mixture: Taste and adjust seasoning with salt and freshly cracked pepper as desired.
  6. Prepare Baking Dish: Lightly coat a small baking dish with 1 teaspoon olive oil. Spread the goat cheese mixture evenly into the dish.
  7. Add Tomatoes and Olive Oil: Arrange the grape tomatoes over the top of the cheese mixture, then drizzle with the remaining 1 teaspoon of olive oil. Season again lightly with salt and pepper.
