Ingredients

Roasted Garlic

  • 1 head of garlic
  • 1 tablespoon extra-virgin olive oil

Whipped Feta Yogurt Dip

  • ¾-1 cup plain Greek yogurt (2% or whole milk preferred)
  • 4 ounces feta, crumbled
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • Freshly ground salt and pepper, to taste

To Garnish

  • Extra-virgin olive oil (for drizzling)
  • 1-2 tablespoons fresh chopped leafy herbs (parsley, chives, or dill)
  • Red pepper flakes, optional


Instructions

  1. Preheat and Prepare Garlic: Preheat your oven to 400 degrees F. Peel away and discard the outer papery layers of the garlic head, keeping the skins of individual cloves intact. Slice about ¼ inch off the top of the garlic head to expose the cloves.
  2. Roast Garlic: Place the garlic head on a medium piece of foil, drizzle the exposed cloves with 1 tablespoon of extra-virgin olive oil, then loosely wrap the garlic in the foil. Set it on a small baking sheet or pan and roast for 40 minutes until the garlic is very fragrant and soft. Let the garlic cool for about 5 minutes before handling.
  3. Prepare the Dip Mixture: Once the garlic is cool enough to touch, squeeze the softened roasted garlic cloves out of their skins directly into a high-powered blender or food processor. Add ¾ to 1 cup of plain Greek yogurt, 4 ounces of crumbled feta, 1 tablespoon olive oil, and 1 tablespoon fresh lemon juice.
  4. Blend to Smooth: Process the ingredients until the mixture becomes smooth and creamy, stopping occasionally to scrape down the sides to ensure even blending. Taste and season with freshly ground salt and pepper, then blend again for a final mix.
  5. Serve and Garnish: Transfer the whipped feta dip to a shallow bowl suitable for dipping. Drizzle extra-virgin olive oil on top and sprinkle with freshly chopped leafy herbs such as parsley, chives, or dill. Add red pepper flakes if desired for a touch of heat.
