Ingredients
Radishes and Seasonings
- 1 lb. fresh globe radishes, stems removed, ends trimmed, and halved
- ½ teaspoon fine salt
- ⅛ teaspoon black pepper
- ¼ teaspoon dried parsley, dried chives, or dried dill (or a mix of all)
- 2 garlic cloves, finely minced
Fat
- 1 tablespoon melted ghee or butter (or oil as alternative)
Optional for Serving
- Ranch dressing for drizzling or dipping
- Fresh parsley, dill, or chives for garnish
Instructions
- Preheat Oven: Preheat your oven to 425°F to ensure it’s hot enough to roast the radishes and bring out their natural sweetness and tenderness.
- Prepare Radishes: In a mixing bowl, combine the halved radishes with melted ghee or butter, dried herbs, salt, and pepper. Toss thoroughly until the radishes are evenly coated with the seasoning and fat, but do not add the minced garlic yet.
- Arrange in Baking Dish: Spread the seasoned radishes into a single layer in a large 9×13-inch baking dish to allow even roasting.
- Roast and Toss: Bake the radishes for 20 to 25 minutes, tossing them every 10 minutes to promote even browning and prevent sticking.
- Add Garlic: After the first 10 minutes of roasting, add the finely minced garlic to the radishes and toss well to incorporate the garlic flavor without burning it.
- Finish Roasting: Return the dish to the oven and continue roasting for another 10 to 15 minutes until the radishes are golden brown and tender when pierced with a fork.
- Serve: Serve the roasted radishes warm, optionally drizzled with ranch dressing and garnished with fresh parsley, dill, or chives for added brightness and flavor.
Notes
- Use fresh globe radishes for best texture and flavor; avoid radishes that are old or soft.
- Adding garlic after 10 minutes of roasting prevents it from burning and becoming bitter.
- You can substitute ghee or butter with olive oil if preferred.
- The ranch dressing and fresh herbs are optional but add lovely complementary flavors.
- Keep tossing the radishes periodically to ensure even roasting and prevent sticking to the pan.
