Ingredients
Meat Mixture
- 1 1/2 tsp oil
- 3/4 cup onions (minced, divided)
- 1 lb 93% lean ground beef
- 1 lb 93% lean ground turkey
- 1/2 cup unseasoned breadcrumbs (or gluten free crumbs)
- 1 large egg
- 1 large egg white
- 1/4 cup beef broth (divided)
- 1/4 tsp kosher salt
- 1/8 tsp ground black pepper (to taste)
Mushroom Gravy
- 2 cups beef broth (divided)
- 8 oz sliced mushrooms
- 2 tbsp all-purpose flour (or gluten-free flour blend)
- 2 tbsp tomato paste
- 1 tsp vinegar
- 2 tsp soy sauce (to taste)
- 1/2 tsp mustard powder
- 1/4 cup water
- Chopped parsley for garnish (optional)
Instructions
- Sauté Onions: Heat 1 1/2 teaspoons of oil in a skillet over medium heat. Add the minced onions and sauté until they are golden brown, about 5 minutes. Remove half of the sautéed onions for later use.
- Make Patties: In a large bowl, combine the ground beef, ground turkey, breadcrumbs, egg, egg white, 1/4 cup of beef broth, kosher salt, black pepper, and half of the sautéed onions. Mix well and form into 8 oval-shaped patties.
- Brown Patties: In the same deep skillet over medium-high heat, brown the patties on both sides, about 4 to 5 minutes per side. Work in batches if necessary to avoid overcrowding. Once browned, transfer the patties to a plate and set aside.
- Sauté Mushrooms: Add the sliced mushrooms to the skillet, season with salt and pepper, and sauté for 2 to 3 minutes until tender.
- Return Patties: Place the browned patties back into the skillet with the sautéed mushrooms.
- Prepare Gravy: In a small bowl, whisk together the 2 tablespoons of flour with the remaining beef broth until smooth. Stir in the remaining sautéed onions, tomato paste, vinegar, water, soy sauce, and mustard powder. Pour this mixture evenly over the patties and mushrooms in the skillet.
- Simmer: Cover the skillet and reduce the heat to low. Cook for 20 minutes, stirring occasionally to prevent sticking and ensure even cooking.
- Serve: Once the meat is cooked through and the gravy has thickened, garnish with chopped parsley if desired. Serve hot.
Notes
- Use gluten-free breadcrumbs and flour to make the recipe gluten-free.
- Substitute soy sauce with tamari for a gluten-free option.
- Ensure patties are not overcrowded when browning to achieve a good crust.
- Cooking on low and covered helps keep patties tender and allows gravy to thicken properly.
- This dish pairs well with mashed potatoes, steamed vegetables, or rice.
