Ingredients
Meat and Seasonings
- 1 lb 93% lean ground turkey
- 1 1/4 tsp kosher salt, divided
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp dried oregano
Vegetables and Liquids
- 1/2 small onion, minced
- 2 tbsp bell pepper, minced
- 3/4 cup water
- 4 oz canned tomato sauce (half of an 8 oz can)
- 4 cups uncooked riced cauliflower
Garnishes
- 4 ounces avocado (from 1 small avocado)
- Chopped cilantro, to taste
- 1 cup chopped lettuce
- 1/4 cup jarred salsa
- Lime wedges, for serving
Instructions
- Brown the Turkey: Over high heat, brown the ground turkey in a large skillet, breaking it into smaller pieces as it cooks. Continue until no pink remains, approximately 5 minutes.
- Add Seasonings: Sprinkle 1 teaspoon kosher salt and all the dry spices—garlic powder, cumin, chili powder, paprika, and oregano—into the skillet. Mix thoroughly to combine the flavors evenly.
- Add Aromatics and Sauce: Incorporate the minced onion and bell pepper, then pour in the water and tomato sauce. Stir and cover the skillet.
- Simmer the Mixture: Reduce heat to low and let the mixture simmer for about 15 minutes, allowing the flavors to meld and the vegetables to soften.
- Cook the Cauliflower Rice: Uncover the skillet and add the riced cauliflower along with 1/4 teaspoon kosher salt. Cook uncovered over medium heat until the cauliflower is tender, about 8 minutes, stirring occasionally to prevent sticking.
- Serve and Garnish: Transfer the cooked taco cauliflower rice to plates. Top each serving with diced avocado, chopped lettuce, a spoonful of salsa, chopped cilantro, and a wedge of lime for squeezing.
Notes
- Use lean ground turkey (93% or higher) to keep the dish healthy and low fat.
- Riced cauliflower can be found fresh or frozen; if using frozen, thaw and drain excess moisture before cooking.
- Adjust spices according to taste, adding more chili powder or paprika for increased heat.
- For added protein, you can sprinkle some shredded cheese or a dollop of sour cream while serving.
- This dish is naturally low-carb and gluten-free, perfect for those with dietary restrictions.
