Ingredients

Chicken and Marinade

  • ½ cup chicken broth
  • ¼ cup olive oil
  • ¼ cup lime juice
  • 4 cloves garlic (peeled and smashed)
  • 1 jalapeno (seeded and chopped)
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 pounds boneless skinless chicken breasts
  • ½ cup chopped fresh cilantro


Instructions

  1. Prepare the marinade: Place the chicken broth, olive oil, lime juice, garlic, jalapeno, kosher salt, cumin, paprika, and black pepper into a food processor. Blend thoroughly until the garlic and jalapeno are finely pulverized and the sauce is well combined.
  2. Arrange chicken in crockpot: Lay the boneless skinless chicken breasts in a single layer in the bottom of the slow cooker.
  3. Add marinade and cook: Pour the blended marinade evenly over the chicken breasts. Cover the crockpot and cook on high for 3 to 4 hours or on low for 5 to 6 hours, until the chicken is very tender and shreds easily with a fork.
