Chicken and Marinade
- ½ cup chicken broth

- 2 pounds boneless skinless chicken breasts

Instructions
- Prepare the marinade: Place the chicken broth, olive oil, lime juice, garlic, jalapeno, kosher salt, cumin, paprika, and black pepper into a food processor. Blend thoroughly until the garlic and jalapeno are finely pulverized and the sauce is well combined.
- Arrange chicken in crockpot: Lay the boneless skinless chicken breasts in a single layer in the bottom of the slow cooker.
- Add marinade and cook: Pour the blended marinade evenly over the chicken breasts. Cover the crockpot and cook on high for 3 to 4 hours or on low for 5 to 6 hours, until the chicken is very tender and shreds easily with a fork.
- Shred chicken and add cilantro: Using two forks, shred the chicken directly in the slow cooker. Stir in the chopped cilantro and toss until the chicken is well coated with the sauce.
