Ingredients
Chicken and Sauce
- 1 pound cubed boneless skinless chicken breasts (1-inch cubes)
- 2 teaspoons minced garlic (about 2 cloves)
- ⅔ cup peanut butter
- 1 cup chicken broth
- 1 cup shredded zucchini
- ⅓ cup soy sauce
- 1 teaspoon sugar
- 1 sliced red pepper
Finishing and Garnish
- 1 tablespoon lime juice
- ½ cup chopped cilantro (plus more for garnish)
- Chopped peanuts (for garnish)
- 12 ounces cooked and drained linguine noodles
Instructions
- Combine ingredients in slow cooker: Add the cubed chicken breasts, minced garlic, peanut butter, chicken broth, shredded zucchini, soy sauce, sugar, and sliced red pepper to the slow cooker. Stir thoroughly to combine all ingredients evenly.
- Cook slowly to develop flavors: Set the slow cooker to LOW and cook for 4 to 5 hours, or alternatively on HIGH for 2 to 3 hours, allowing the chicken to become tender and the sauce to thicken and meld with the vegetables.
- Add lime juice and cilantro: About 30 minutes before serving, stir in the lime juice and half a cup of chopped cilantro to enhance the fresh and tangy flavors. Continue cooking on the same setting to incorporate these final ingredients.
- Prepare noodles and serve: Cook and drain the linguine noodles according to package instructions. Serve the peanut chicken mixture over the linguine and garnish with chopped peanuts and additional cilantro for added texture and freshness.
Notes
- You can adjust the spiciness by adding chili flakes or fresh chilies if you prefer more heat.
- Use natural or creamy peanut butter without added sugar for best results.
- If soy sauce is not preferred, tamari or coconut aminos can be used as gluten-free alternatives.
- For a lower carb option, serve over spiralized zucchini noodles instead of linguine.
- This recipe can be doubled easily to serve more people, but ensure your slow cooker is large enough to accommodate the increased volume.
