Noodles

  • 8 ounces wide rice noodles

Sauce and Aromatics

  • 2 shallots, sliced
  • 5 cloves garlic, minced

  • 1 tablespoon oil (olive or vegetable oil)

Instructions

  1. Cook noodles: Bring a large pot of water to a boil and cook the rice noodles according to the package instructions until tender but firm. Drain and set aside.

  4. Whisk sauce ingredients: In a bowl or directly in the pot, add soy sauce, chili garlic sauce, brown sugar, sriracha, rice vinegar, and toasted sesame oil. Whisk or stir together to combine. Start conservatively with the chili garlic sauce and sriracha, as you can always add more if desired.
  5. Combine noodles and sauce: Add the cooked noodles to the sauce in the pot. Toss thoroughly to coat evenly with the sauce.
