Whipped Cream Base
- 4 ounces block cream cheese (softened)
- 2-4 tablespoons freeze dried mango powder (adjust to taste)
- 1 tablespoon vanilla bean paste
- ¾ cup powdered sugar (adjust to taste)
- 2 cups heavy cream (chilled)
- Yellow/orange gel food coloring (optional)
Instructions
- Mix cream cheese, mango powder, and vanilla: In a large mixing bowl, use a hand mixer to whip together 4 ounces of softened cream cheese, 2-4 tablespoons of freeze dried mango powder, and 1 tablespoon of vanilla bean paste on medium speed until the mixture is smooth, about 2-4 minutes.
- Add heavy cream: Gradually pour in 2 cups of chilled heavy cream while continuing to mix at medium speed until medium peaks form. The cream should mostly hold its shape with peaks that bend slightly.
- Add powdered sugar: Mix in ¾ cup powdered sugar in three additions, tasting after each to adjust sweetness if needed. If a deeper color is desired, add a small drop of yellow/orange gel food coloring at this stage.
- Whip to stiff peaks: Increase the mixer speed to medium-high and continue beating until stiff peaks form. The cream should show visible whisk marks and hold its shape firmly.
- Use or store: Enjoy your stabilized mango whipped cream immediately as a frosting for cupcakes, cakes, or as a delicious topping for desserts.
- Fix over whipped cream: If the whipped cream becomes over mixed and appears split or chunky, add a splash of heavy cream gradually while mixing on low speed until the cream smooths back out.
